The fries have had enough of being the sidekick. In Paphos, a new delivery-only venture is giving them top billing, no burger required.
CuT is the creation of two friends, Dimitrios and Christophe, whose enthusiasm for a good fried potato took shape in different corners of Europe.
For Dimitrios, who is Greek, three years studying in Amsterdam left a lasting appreciation for fries done properly. Christophe brought his Luxembourg roots and a background in hospitality and high-end kitchens. Their shared obsession became a business.
Speaking to Wiz Guide, the founders described a concept inspired by the fry-loving traditions of Belgium, the Netherlands and Luxembourg, collectively known as Benelux.
The aim is to give potatoes the attention usually reserved for a restaurant’s signature dish. Which seems fair. They have been carrying disappointing burgers for years.
CuT says it uses fresh potatoes from a local producer, cuts them daily and fries them twice. The cooking fat is a blend containing Belgian beef fat, chosen for its flavor, a detail worth knowing for anyone avoiding animal fats.
Then comes the delivery challenge: keeping a crisp potato from becoming a steamed one on the journey home. The founders say their specially designed boxes have ventilation openings to help moisture escape.
Pick a color, choose a sauce
The five signature sauces are made in-house and named after colors.
Blanc is freshly prepared mayonnaise; Rouge is a slightly spicy homemade ketchup; and Jaune combines honey with Dijon mustard. Orange is CuT’s take on Belgian Andalouse sauce, while Noir adds black truffle to homemade mayonnaise.
Apparently, even the humble chip can dress for dinner.
For now, CuT operates as a delivery kitchen, with no dining room. The founders say that allows them to concentrate on the food and packaging while building a following in Paphos.
Christophe handles the kitchen, frying and sauces, while Dimitrios brings a decade of operations experience to the branding, ordering platforms and daily running of the business.
Their ambition is to expand gradually across the island and eventually beyond it. Parent company Keleos Food Concepts also says a sister brand is in the works.
First, though, there is the matter of persuading Paphos that “just fries” can be the whole order.
